Poached Pears in Chambord

This is a favorite breakfast starter at Sunrise Landing, but works as a light dessert, as well.

4 large pears, peeled, cut in half and cored
4 tablespoons brown sugar
2 tablespoons cinnamon
2 tablespoons Chambord (raspberry liquor)
6 tablespoons white wine
2 tablespoons blueberries
2 tablespoons raspberries
cheddar, bleu, or feta cheese or a dollop of whipped cream, to top

Place the pears cored side up in glass baking dish. Sprinkle sugar and cinnamon over the pears. Pour Chambord and wine over them, and divide berries among pears. Cover and microwave on high for 10 minutes. Serve warm with sauce and a sprinkling of cheese or a dollop of whipped sweet cream. You can use fresh, frozen or dried berries for this recipe. Serves 4. Enjoy!
NOTE: Did you know that pears are a great source of dietary fiber? One pear provides 16 percent of the recommended daily allowance of fiber.
